For birthday celebrations I went to the Queensland Art Gallery with lovely friends. I saw a giant snake skeleton sculpture, an Olsen painting, Durer’s apocalypse and ate dinosaur cupcakes.
The cupcakes were made from ‘what do we have in the refrigerator/ cupboard at 7am today?’ and were delicious. I know there were no dinosaurs at La Brea, but the cupcakes looked like a quagmire, so “La Brea Cupcakes” is what they are now named.
La Brea Cupcakes
Blend ½ cup of applesauce/ pureed pear and a packet of silken tofu using an electric mixer. Gradually beat in ¾ cup raw sugar until it dissolves, then add a teaspoon of vanilla extract and 1/3 cup of olive oil.
Sift together 1 cup of self- raising flour, ½ teaspoon baking soda and 1/3 cup of cocoa, add ¼ teaspoon salt and gradually fold into the tofu mixture.
Divide into 12 pattypans and bake at 180c for 20-25 minutes. Set aside and cool the fuckers down before icing (I skipped this step).
Melt 1 cup of choc-chips.
Blend another packet of silken tofu with a dash of milk/ substitute, 2 tablespoons of maple syrup and a teaspoon of vanilla extract. Fold this into the melted chocolate.
Cover and chill for an hour or so.
Spread/ pipe liberally over cool cupcakes, add plastic dinosaurs as needed.
